  • 1 cup long-grain rice
  • 2 tbsp taco seasoning
  • 1 cup diced bell peppers (mix of colors)
  • 1 (14.5 oz) can diced tomatoes (fire-roasted)
  • 1 (15 oz) can black beans (drained)
  • 1 cup shredded cheddar cheese
  • 2 tbsp chopped fresh cilantro
  • 2 cups water or broth

Instructions

  1. In a large skillet over medium heat, brown the ground beef or turkey until no longer pink.
  2. Add the diced bell peppers and rinsed rice; stir to combine.
  3. Sprinkle in taco seasoning and mix well.
  4. Pour in the canned tomatoes with juice and drained black beans; stir to combine.
