Ingredients

Scale
  • 1 cup Arborio rice
  • 2 cups low-sodium vegetable broth
  • 8 oz fresh mushrooms, sliced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tsp olive oil
  • 1 tsp dried thyme
  • ¼ tsp freshly ground black pepper

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté diced onion until translucent, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
  2. Add sliced mushrooms to the pot and sauté until they release moisture and soften, around 5-7 minutes.
  3. Stir in Arborio rice and toast for about 2 minutes.
  4. Pour in vegetable broth, add thyme and pepper; bring to a gentle boil. Reduce heat to low, cover, and simmer for 18-20 minutes.
  5. Remove from heat but keep covered for an additional 5 minutes to let flavors meld. Fluff the rice with a fork before serving.
