  • 4 cups low-sodium vegetable broth

  • 2 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 2 tsp olive oil
  • Salt and pepper to taste
  • Green onions or sesame seeds for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté minced garlic for about 1 minute until fragrant, then add sliced mushrooms and cook until tender.
  2. Pour in the pasta and vegetable broth, ensuring the pasta is submerged. Bring to a gentle boil.
  3. Stir in miso paste, soy sauce, and sesame oil. Mix thoroughly to coat the pasta.
