- 8 oz fettuccine or spaghetti
- 1 cup heavy cream
- 2 medium lemons (juice and zest)
- 4 cloves garlic (minced)
- 1 cup grated Parmesan cheese
- 2 cups fresh spinach
- Salt and pepper to taste
- 2 tsp olive oil
Instructions
- In a large pot, bring salted water to boil. Add pasta and cook until al dente according to package instructions. Drain, reserving 1 cup of pasta water.
- In the same pot, heat olive oil over medium heat. Add minced garlic and sauté until fragrant (about 1 minute).
- Pour in heavy cream along with lemon juice and zest. Stir to combine.
- Return cooked pasta to the pot, add Parmesan cheese and spinach, tossing gently until well coated.
- If sauce is too thick, gradually add reserved pasta water until desired consistency is reached.
- Plate the pasta and top with additional Parmesan and lemon zest if desired.
