Description

One-Pot Creamy Lemon Pasta is a delightful dish that brings together the zesty brightness of fresh lemons and the rich creaminess of heavy cream. In just under 30 minutes, you can create this restaurant-quality meal in one pot, making it perfect for busy weeknights or impressing guests.


Ingredients

  • 8 oz fettuccine or spaghetti
  • 1 cup heavy cream
  • 2 medium lemons (juice and zest)
  • 4 cloves garlic (minced)
  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • 2 tsp olive oil

Instructions

  1. In a large pot, bring salted water to boil. Add pasta and cook until al dente according to package instructions. Drain, reserving 1 cup of pasta water.
  2. In the same pot, heat olive oil over medium heat. Add minced garlic and sauté until fragrant (about 1 minute).
  3. Pour in heavy cream along with lemon juice and zest. Stir to combine.
  4. Return cooked pasta to the pot, add Parmesan cheese and spinach, tossing gently until well coated.
  5. If sauce is too thick, gradually add reserved pasta water until desired consistency is reached.
  6. Plate the pasta and top with additional Parmesan and lemon zest if desired.
