  • 3 large carrots, sliced thick
  • 2 bell peppers, chopped (any color)
  • 2 tbsp curry powder
  • 1 tsp turmeric powder
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. 1. Sear the beef: In a large pot over medium-high heat, add olive oil and sear the beef chuck roast on all sides until browned (about 5 minutes per side). Remove and set aside.
  2. 2. Sauté aromatics: In the same pot, add minced garlic and grated ginger. Sauté for about 1 minute until fragrant.
  3. 3. Add vegetables: Stir in sliced carrots and bell peppers; sauté for another 5 minutes until slightly softened.
  4. 4. Combine ingredients: Return the seared beef to the pot along with coconut milk, vegetable broth, curry powder, turmeric, salt, and pepper. Stir well.
  5. 5. Simmer: Bring to a gentle simmer over low heat. Cover and cook for about 2 hours until the beef is tender.
