- 4 boneless, skinless chicken breasts
- 4 cloves fresh garlic, minced
- 2 tbsp fresh lemon juice
- 1/4 cup Piri Piri sauce
- 1 cup long grain rice
- 2 cups water
- 1 tbsp olive oil
- 2 tbsp low-sodium soy sauce
- 1 tbsp honey
Instructions
- Preheat oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
- In a bowl, mix garlic, Piri Piri sauce, lemon juice, soy sauce, and honey. Add chicken and marinate for at least 30 minutes.
- Rinse rice under cold water until clear; drain.
- In a pot over medium heat, heat olive oil and add rinsed rice. Stir in water; bring to a boil, then cover and reduce heat for 15 minutes until water is absorbed.
- Bake marinated chicken for 25-30 minutes until cooked through (165°F/74°C).
- Fluff the rice with a fork and serve alongside chicken, drizzling leftover marinade on top.
