  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 2 tbsp fresh lemon juice
  • 1/4 cup Piri Piri sauce
  • 1 cup long grain rice
  • 2 cups water
  • 1 tbsp olive oil
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp honey

Instructions

  1. Preheat oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. In a bowl, mix garlic, Piri Piri sauce, lemon juice, soy sauce, and honey. Add chicken and marinate for at least 30 minutes.
  3. Rinse rice under cold water until clear; drain.
  4. In a pot over medium heat, heat olive oil and add rinsed rice. Stir in water; bring to a boil, then cover and reduce heat for 15 minutes until water is absorbed.
  5. Bake marinated chicken for 25-30 minutes until cooked through (165°F/74°C).
  6. Fluff the rice with a fork and serve alongside chicken, drizzling leftover marinade on top.
