  • 1 small red onion, chopped
  • 2 tsp cumin
  • 2 tsp coriander
  • 1 tsp cinnamon
  • 2 tbsp olive oil
  • Fresh parsley or cilantro, for garnish

Instructions

  1. Prepare the couscous by boiling vegetable broth in a saucepan. Add couscous, cover tightly, and remove from heat after stirring. Let it sit for about 5 minutes until fluffy.

  3. Add diced bell peppers and zucchini; cook until slightly softened but still crunchy (about 5-7 minutes).
  4. Stir in cumin, coriander, cinnamon, and rinsed chickpeas; cook for an additional 3-4 minutes until fragrant.
