Ingredients

  • 2 medium aubergines (eggplants)
  • 3 tbsp miso paste (white or red)
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp honey or maple syrup
  • 1 tbsp water
  • 1 tsp sesame oil (optional)
  • 1 tbsp toasted sesame seeds
  • 2 chopped green onions

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut the aubergines in half lengthwise and score them deeply in a crisscross pattern. Sprinkle with salt and let sit for 15 minutes to draw out moisture.
  3. In a bowl, whisk together miso paste, soy sauce, honey (or maple syrup), and water until smooth.
  4. Rinse the aubergines, pat dry, and brush generously with the miso glaze. Place cut-side up on the prepared baking sheet.
  5. Bake for 25-30 minutes until golden brown and tender.
  6. Once baked, sprinkle with sesame seeds and green onions before serving.
