- 1 tbsp water

- 2 chopped green onions
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Cut the aubergines in half lengthwise and score them deeply in a crisscross pattern. Sprinkle with salt and let sit for 15 minutes to draw out moisture.
- In a bowl, whisk together miso paste, soy sauce, honey (or maple syrup), and water until smooth.
- Rinse the aubergines, pat dry, and brush generously with the miso glaze. Place cut-side up on the prepared baking sheet.
- Bake for 25-30 minutes until golden brown and tender.
- Once baked, sprinkle with sesame seeds and green onions before serving.
