  • 2 medium sweet potatoes (about 500g)
  • 2 tbsp unsalted butter
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 cup chopped pecans (or walnuts)
  • 1 cup mini marshmallows (for topping)
  • 1/2 cup panko breadcrumbs (for topping)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a muffin tin.
  2. Peel and cube sweet potatoes; roast on a parchment-lined baking sheet with olive oil for 25-30 minutes until tender.
  3. Mash roasted sweet potatoes in a bowl; mix in butter, brown sugar, cinnamon, and salt until smooth.
  4. Press about 2 tablespoons of the mixture into each muffin cup to form nests.
  5. In a separate bowl, combine panko breadcrumbs with melted butter and chopped pecans; sprinkle over each nest.
  6. Bake for 15-20 minutes until golden brown; add mini marshmallows during the last few minutes of baking.
