  • 1 cup crushed chocolate cookies (like Oreos)
  • 4 tbsp unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 2 tsp vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 2 large eggs
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 325°F (160°C) and line a muffin tin with cupcake liners.
  2. In a bowl, mix crushed chocolate cookies with melted butter. Press about one tablespoon of the mixture into each muffin liner to form the crust.
  3. In another bowl, beat cream cheese until smooth. Add sugar, vanilla extract, and cocoa powder; mix until creamy.
  4. Add eggs one at a time, mixing well after each addition. Fold in the chocolate chips gently.
  5. Spoon the filling over each crust, filling them three-quarters full.
  6. Bake for 18-20 minutes until set around the edges but slightly jiggly in the center. Allow to cool before refrigerating for at least two hours.
