  • 3 garlic cloves, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 medium zucchini, diced
  • 1 cup green beans, trimmed and cut
  • 2 cups kale or spinach, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups low-sodium vegetable broth
  • 1 cup small pasta (optional)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions, carrots, and celery until tender (about 5 minutes).
  2. Add garlic and cook for another minute until fragrant.
  3. Stir in zucchini, green beans, canned tomatoes (with juice), and greens. Mix well.
  4. Pour in vegetable broth and bring to a gentle boil. If using pasta, add it now along with any desired herbs or seasonings.
  5. Reduce heat and let simmer uncovered for about 20 minutes until vegetables are tender.
  6. Serve hot with a drizzle of olive oil or sprinkle of Parmesan cheese if desired.
