  • 1 lb ground beef (80% lean)
  • 1 medium onion, finely grated
  • 1/4 cup fresh parsley, chopped
  • 2 tsp cumin
  • 1 tsp coriander
  • 1 tsp paprika
  • Salt and pepper to taste
  • 4 pita breads or wraps
  • 1 cup Greek yogurt (full-fat)
  • 1/2 cucumber, grated and excess water squeezed out
  • 2 cloves garlic, minced
  • 2 tbsp fresh lemon juice
  • 2 tbsp dill or mint (optional)

Instructions

  1. In a large bowl, combine ground beef, grated onion, chopped parsley, cumin, coriander, paprika, salt, and pepper. Mix gently until just combined.
  2. Shape the mixture into elongated kebabs around skewers.
  3. Preheat the grill to medium-high heat or set your oven to broil at 500°F (260°C).
  4. Grill or broil skewers for about 4-5 minutes on each side until browned.
  5. For tzatziki sauce, mix Greek yogurt with grated cucumber, minced garlic, lemon juice, salt, and optional herbs until creamy.
  6. Serve hot with warm pita bread or wraps and tzatziki sauce.
