  • 4 ears fresh corn or 3 cups frozen corn (thawed)
  • 8 oz cream cheese (softened)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup mayonnaise
  • 2 tbsp freshly squeezed lime juice
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1/2 cup Cotija cheese (crumbled)
  • 1/4 cup cilantro (chopped)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a large baking dish with nonstick spray.
  2. Cut the kernels off the fresh corn or drain thawed frozen corn. Place in a mixing bowl.
  3. Add cream cheese, shredded cheeses (reserve some for later), mayonnaise, lime juice, chili powder, salt, and pepper to the corn. Mix until well combined.
  4. Transfer the mixture to the greased baking dish and smooth the top. Sprinkle remaining cheese on top.
  5. Bake in the preheated oven for 25-30 minutes until golden brown and bubbly.
  6. Garnish with Cotija cheese and chopped cilantro before serving.
