- 4 ears fresh corn or 3 cups frozen corn (thawed)
- 8 oz cream cheese (softened)
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup mayonnaise
- 2 tbsp freshly squeezed lime juice
- 1 tsp chili powder
- Salt and pepper to taste
- 1/2 cup Cotija cheese (crumbled)
- 1/4 cup cilantro (chopped)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a large baking dish with nonstick spray.
- Cut the kernels off the fresh corn or drain thawed frozen corn. Place in a mixing bowl.
- Add cream cheese, shredded cheeses (reserve some for later), mayonnaise, lime juice, chili powder, salt, and pepper to the corn. Mix until well combined.
- Transfer the mixture to the greased baking dish and smooth the top. Sprinkle remaining cheese on top.
