- 1/4 cup fresh mint, chopped
- Juice of 1 lemon
- 2 tbsp extra virgin olive oil

- Salt and pepper to taste
Instructions
- Marinate the Steak: Combine olive oil, cumin, paprika, salt, and pepper in a bowl. Add the steak and coat well. Refrigerate for at least 30 minutes.
- Cook the Quinoa: Rinse quinoa under cold water. In a pot, combine quinoa with 2 cups water or broth. Bring to boil, then reduce heat and simmer until fluffy (about 15 minutes).
