  • 1 cup quinoa
  • 1 cup cherry tomatoes, halved
  • 1/2 English cucumber, diced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • Juice of 1 lemon (about 3 tbsp)
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water. In a saucepan, combine quinoa with 2 cups of water. Bring to a boil, then reduce heat and simmer covered for about 15 minutes until fluffy.
  2. While quinoa cooks, prepare the veggies: chop cherry tomatoes and cucumber into bite-sized pieces.
  3. Slice Kalamata olives and crumble feta cheese.
  4. Finely chop parsley and mint; combine them in a mixing bowl with olives and feta.
  5. In a small bowl, whisk together lemon juice and olive oil; season with salt and pepper.
  6. In a large serving bowl, mix cooked quinoa with prepared veggies and dressing; toss gently until well combined.
