  • 1 cup plain breadcrumbs
  • 2 large eggs
  • 1 medium onion, finely chopped
  • 1 tsp garlic powder
  • 1/2 cup ketchup
  • 2 lbs starchy potatoes (like Russets)
  • 4 tbsp unsalted butter
  • 1/2 cup milk or cream
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine ground beef, breadcrumbs, onion, eggs, garlic powder, and ketchup. Mix thoroughly.
  3. Shape the mixture into a loaf and place it on a lined baking sheet or in a loaf pan.
  4. Bake for about 60 minutes until the internal temperature reaches 160°F (70°C).
  5. While baking, boil peeled and cubed potatoes in salted water until fork-tender (about 15-20 minutes). Drain and mash with butter and milk until smooth.
  6. Stir in half the cheddar cheese until melted.
  7. Let the meatloaf rest for 10 minutes before slicing. Serve slices over mashed potatoes and top with remaining cheese.
