Ingredients

  • 2 cups mixed greens (romaine, spinach, arugula)
  • 1 cup cherry tomatoes (halved)
  • 1 medium cucumber (sliced)
  • 1 bell pepper (sliced)
  • ½ cup crumbled feta cheese
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste
  • 1 cup protein of choice (grilled chicken, tuna, or chickpeas)

Instructions

  1. Prepare your mason jar by washing it thoroughly.
  2. Pour 2 tablespoons of olive oil into the bottom of the jar, followed by 2 tablespoons of balsamic vinegar.
  3. Layer hardy vegetables like cucumbers and bell peppers first to avoid sogginess.
  4. Add your protein on top of the veggies.
  5. Follow with cherry tomatoes and finish with mixed greens at the top.
  6. Seal the jar tightly and store in the fridge until ready to eat.
