- In a saucepan over low heat, combine coconut milk, sugar, and salt; stir until dissolved (do not boil).
- Mix half of the coconut mixture with cooked sticky rice and set aside.
- Blend diced mangoes into a puree; reserve some chunks for texture if desired.
- In popsicle molds, alternate layers of sticky rice mixture and mango puree; top with remaining coconut mixture.
- Insert sticks and freeze for at least 6 hours.
