Mango Bango, or Mango Sago, is a vibrant tropical dessert that transports you to sun-soaked shores with every bite. Creamy coconut milk and luscious mango puree blend seamlessly, while chewy sago pearls add delightful texture.   • 2 ripe mangoes (about 2 cups pureed)
  • 1/2 cup sago pearls
  • 1 can (13.5 oz) full-fat coconut milk
  • 1/2 cup water (for boiling sago)
  • 2–4 tablespoons granulated sugar (to taste)
  • Optional toppings: diced mango, toasted coconut flakes

Instructions

  1. Rinse sago pearls under cold water until clear. Boil water in a pot; add rinsed sago pearls once bubbling.
  2. Cook for 10-15 minutes until translucent and chewy, stirring occasionally. Drain and rinse with cold water to stop cooking.
  3. While sago cools, peel and chop ripe mangoes into chunks. Blend until smooth; add sugar to taste.
  4. In a bowl, combine cooled sago pearls with coconut milk and mango puree. Mix well and adjust sweetness if needed.
  5. Chill in the refrigerator for at least 30 minutes before serving. Serve in bowls topped with additional mango or coconut flakes.
