- 2 ripe mangoes (about 2 cups pureed)
- 1/2 cup sago pearls
- 1 can (13.5 oz) full-fat coconut milk
- 1/2 cup water (for boiling sago)
- 2–4 tablespoons granulated sugar (to taste)
- Optional toppings: diced mango, toasted coconut flakes
Instructions
- Rinse sago pearls under cold water until clear. Boil water in a pot; add rinsed sago pearls once bubbling.
- Cook for 10-15 minutes until translucent and chewy, stirring occasionally. Drain and rinse with cold water to stop cooking.
- While sago cools, peel and chop ripe mangoes into chunks. Blend until smooth; add sugar to taste.
- In a bowl, combine cooled sago pearls with coconut milk and mango puree. Mix well and adjust sweetness if needed.
- Chill in the refrigerator for at least 30 minutes before serving. Serve in bowls topped with additional mango or coconut flakes.
