  • 3 large fresh lemons (juiced)
  • 3 large eggs (2 whole, 1 white)
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs with melted butter and 1/4 cup sugar until combined. Press firmly into an 8×8-inch baking dish.
  3. Bake the crust for about 10 minutes until golden brown.
  4. In another bowl, whisk together lemon juice, remaining sugar, cornstarch, salt, and whole eggs until smooth. Pour this mixture over the warm crust.
  5. Bake again for about 20 minutes until set but slightly jiggly in the center.
  6. While baking, beat egg whites in a clean bowl until soft peaks form. Gradually add remaining sugar while beating until stiff peaks form.
  7. Spread meringue over the lemon layer and return to the oven for an additional 10 minutes until lightly browned.
