  2. In a large bowl, whisk together flour, sugar, baking powder, and salt until combined.
  3. In another bowl, whisk egg yolks with oil, water, lemon juice, and zest until smooth.
  4. In a separate bowl, whip egg whites with cream of tartar until stiff peaks form.
  5. Gently fold the dry mixture into the yolk mixture, then carefully incorporate the whipped egg whites.
  6. Pour the batter into the prepared pan and bake for about 55 minutes or until a toothpick comes out clean.
  7. Let cool upside down on a wire rack before removing from the pan.
