  • 1 can (15 oz) cannellini or great northern beans, drained and rinsed
  • 4 cups low-sodium vegetable broth
  • 1/4 cup freshly squeezed lemon juice
  • 3 cloves garlic, minced
  • 1 medium yellow onion, chopped
  • 2 tbsp extra virgin olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion until translucent (about 5 minutes), then add minced garlic and sauté until fragrant.
  2. Add chopped asparagus and cook for an additional 3 minutes until slightly softened.
  3. Pour in vegetable broth and white beans; bring to a gentle boil. Reduce heat and simmer for 10 minutes.
  4. Blend the soup until smooth using an immersion blender or regular blender (leave some chunks if desired).
