  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cloves fresh garlic, minced
  • 1 green bell pepper, diced
  • 1 sweet onion, chopped
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup sour cream
  • 1 cup low-sodium chicken broth
  • 2 cups crushed tortilla chips
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and spray a baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, cook the chicken in oil until golden brown (6-7 minutes per side). Remove from heat and shred.
  3. Sauté garlic, onion, and bell pepper in the same skillet until softened (about 5 minutes).
  4. In a large bowl, mix shredded chicken, sautéed vegetables, cream of mushroom soup, sour cream, half of the crushed tortilla chips, salt, and pepper.
  5. Pour the mixture into the prepared baking dish and top with remaining tortilla chips.
  6. Bake uncovered for 30-35 minutes or until bubbly and golden brown.
