  • 4 cups Kirby cucumbers (sliced into spears or rounds)
  • 1 cup white vinegar
  • 1 cup filtered water
  • 2 cloves fresh garlic (whole)
  • 2 tbsp fresh dill sprigs
  • 12 tsp red pepper flakes (adjust for spice level)
  • 1 tbsp granulated sugar
  • 1 tbsp kosher salt

Instructions

  1. Sterilize mason jars by boiling them for 10 minutes.
  2. In a saucepan, combine vinegar, water, sugar, salt, garlic, red pepper flakes, and dill. Bring to a boil until sugar dissolves.
  3. Pack cucumbers into the sterilized jars tightly.
  4. Pour the hot brine over cucumbers, leaving half an inch of headspace.
  5. Seal jars tightly and cool to room temperature before refrigerating.
  6. Allow pickles to sit in the fridge for at least 24 hours for optimal flavor.
