Ingredients

  • 1 ¾ cups powdered sugar
  • 3 large egg whites (aged preferred)
  • ½ tsp cream of tartar
  • ¼ cup fresh Key lime juice
  • ½ cup unsalted butter (softened)
  • Zest of 1 Key lime

Instructions

  1. Preheat oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, beat egg whites until foamy; add cream of tartar and continue until soft peaks form.

  6. For the filling, whip butter, Key lime juice, lime zest, and powdered sugar until smooth.
