  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced (button or cremini)
  • 4 large eggs
  • 1 cup heavy cream
  • 1 medium onion, diced
  • 1 cup Gruyère or cheddar cheese, shredded
  • Salt and pepper to taste
  • 2 tsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C). Place the pie crust in a 9-inch pie pan and prick the bottom with a fork.
  2. In a skillet, heat olive oil over medium heat. Sauté onion until translucent. Add sliced mushrooms and cook until tender.
  3. Stir in fresh spinach and cook until wilted, about 2 minutes.
  4. In a bowl, whisk together eggs, heavy cream, salt, and pepper until well combined.
  5. Spread sautéed vegetables evenly in the pie crust and pour the egg mixture over them.
