  • 1 ripe avocado
  • 2 ciabatta rolls
  • 1 cup fresh spinach
  • 2 tbsp mayonnaise or aioli
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 1 tsp lemon juice

Instructions

  1. Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat. Cook chicken for 6-7 minutes per side until golden brown and cooked through.
