Ingredients

Scale
  • 4 large eggs
  • 4 corn tortillas
  • 1 cup black beans (canned or cooked)
  • 2 ripe tomatoes, diced
  • 1 avocado, sliced
  • 1 tsp chili powder
  • 2 tbsp fresh lime juice
  • Salt to taste

Instructions

  1. Heat a skillet over medium heat and add a splash of olive oil. Warm the corn tortillas for about one minute on each side until slightly crispy but still pliable.
  2. In the same skillet, crack in the eggs and cook sunny-side up for 3-4 minutes until whites are set and yolks are runny.
  3. On each tortilla, layer black beans followed by the fried egg.
  4. In a bowl, combine diced tomatoes, chili powder, lime juice, and salt to create your salsa. Spoon generously over the eggs.
  5. Top with sliced avocado before serving hot.
