  • 2 tablespoons unflavored gelatin powder
  • 1/2 cup cold water
  • 1 teaspoon vanilla extract
  • 1/4 cup powdered sugar (for dusting)

Instructions

  1. Prepare your ingredients: Stand mixer, saucepan, and an 8×8 inch baking dish lined with parchment paper.
  2. Bloom gelatin by mixing it with cold water in a small bowl; let it sit for about 5 minutes.
  3. In a saucepan, combine granulated sugar and water; heat until boiling and the mixture reaches 240°F (115°C).
  4. Pour hot syrup into bloomed gelatin while mixing on low speed; then add raspberry puree and vanilla extract.
  5. Increase mixer speed to high and whip for about 10-15 minutes until thickened and fluffy.
  6. Spread the mixture into the prepared baking dish, dust with powdered sugar, and allow it to set at room temperature for at least 4 hours or overnight.
  7. Slice into squares, dust again with powdered sugar to prevent sticking, and serve.
