- 1 cup whole wheat breadcrumbs
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 large eggs
- 1/2 cup low-sugar ketchup (plus more for topping)
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 cup diced bell peppers or carrots (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Sauté chopped onion and minced garlic in a skillet over medium heat until translucent (about 5 minutes).
- In a large bowl, combine ground chicken, sautéed onion and garlic, breadcrumbs, eggs, ketchup, salt, pepper, oregano, basil, and any optional vegetables. Mix gently until combined.
- Transfer the mixture to a lined baking sheet and shape it into a loaf.
- Brush additional ketchup on top for added flavor.
- Bake for 50-60 minutes or until the internal temperature reaches 165°F (74°C). Let rest before slicing.
