- 8 small corn tortillas
- 1 can (15 oz) black beans, rinsed and drained
- 2 cups bell peppers (mixed colors), chopped
- 2 ripe avocados, diced
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 cup salsa verde
Instructions
- Preheat oven to 425°F (220°C). Toss chopped bell peppers with olive oil, cumin, and chili powder on a baking sheet. Roast for 20 minutes until tender.
- While peppers roast, warm corn tortillas in a dry skillet over medium heat for about 30 seconds per side.
- Assemble tacos by layering warm tortillas with black beans, roasted bell peppers, diced avocados, and cilantro. Squeeze lime juice over the top.
- Add salsa verde as desired and serve immediately.
