  • 2 medium sweet potatoes (cubed)
  • 1 red bell pepper (chopped)
  • 2 cups fresh spinach
  • 6 large eggs
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Toss sweet potatoes and red bell pepper on the baking sheet with olive oil, salt, and pepper. Roast for 20 minutes until tender.
