  • 1 cup quinoa
  • 1 can chickpeas (15 oz)
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • ½ cup feta cheese (crumbled)
  • 3 tbsp extra virgin olive oil
  • Juice of 1 lemon
  • Fresh herbs (basil or parsley)

Instructions

  1. Rinse quinoa under cold water until clear. In a saucepan, combine quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
  2. Preheat oven to 400°F (200°C). Drain and rinse chickpeas; spread on a baking sheet. Drizzle with olive oil, season with salt and pepper, and roast for 20-25 minutes until crispy.
  3. While quinoa cooks and chickpeas roast, chop cucumber and halve cherry tomatoes. Toss with spinach in a bowl.
  4. Whisk together olive oil, lemon juice, salt, and pepper for the dressing.
  5. Assemble by placing quinoa at the base of serving bowls; top with roasted chickpeas and veggies. Crumble feta over each bowl and drizzle with dressing.
