- 2 tbsp fresh thyme leaves
- Coarse sea salt for sprinkling
Instructions
- In a large bowl, combine warm water and instant yeast. Let sit for 5 minutes until frothy.
- Add flour, salt, and olive oil to the yeast mixture. Stir until combined; knead on a floured surface until smooth.
- Place dough in an oiled bowl, cover with a damp cloth, and let rise in a warm spot for about 1 hour or until doubled in size.
- Punch down the risen dough and transfer to a greased baking sheet, shaping it into a rectangle or circle.
- Drizzle with olive oil, create dimples with your fingers, and top with Gruyère cheese and thyme.
- Cover again and let rise for another 30 minutes while preheating your oven to 425°F.
- Bake for 20-25 minutes until golden brown; sprinkle with coarse sea salt before baking.
