  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1/4 cup freshly squeezed lime juice
  • 1/4 cup chopped fresh cilantro (optional)
  • 2 tsp chili powder
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup crumbled cotija cheese for topping
  • Wooden or metal skewers

Instructions

  1. In a medium bowl, whisk together minced garlic, lime juice, cilantro (if using), chili powder, olive oil, salt, and pepper.
  2. Cut chicken into bite-sized pieces and toss in the marinade until evenly coated. Cover and refrigerate for at least 30 minutes.
  3. Preheat grill to medium-high heat (400°F). If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  4. Thread marinated chicken onto skewers, leaving space between pieces for even cooking.
  5. Grill skewers for about 10-15 minutes, turning occasionally until chicken is fully cooked and charred.
  6. Remove from grill and sprinkle with cotija cheese before serving.
