  • 1 cup granulated sugar
  • 4 large eggs (room temperature)
  • 1 cup strong brewed espresso (cooled)
  • 1 cup mascarpone cheese
  • 2 tbsp unsweetened cocoa powder
  • 1 tsp vanilla extract
  • For Garnish: Chocolate shavings

Instructions

  1. Preheat your oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  2. In a bowl, whisk together flour and sugar. In another bowl, beat the eggs until fluffy and fold them into the dry ingredients along with vanilla extract.
  3. Pour the batter into the prepared pan and bake for 12-15 minutes until golden brown.
  4. Cool the cake slightly before flipping it onto a kitchen towel dusted with cocoa powder.
  5. For the filling, whip together mascarpone cheese, powdered sugar, and vanilla until smooth.
  6. Soak cooled cake strips briefly in espresso and spread an even layer of filling before rolling into a log shape.
