  • 3 tablespoons Gochujang
  • 2 cups low-sodium vegetable broth
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 cup bell peppers, diced (red or yellow)
  • 2 green onions, sliced
  • 2 tablespoons toasted sesame oil
  • Salt and pepper to taste

Instructions

  1. Rinse wild rice under cold water until clear.
  2. In a large skillet, heat sesame oil over medium heat. Add chopped onion and minced garlic; sauté until fragrant (about 3 minutes).
  3. Stir in diced bell peppers and Gochujang; cook for about 5 minutes until peppers soften.
  4. Pour in vegetable broth and bring to a gentle boil.
  5. Add rinsed wild rice, reduce heat to low, cover tightly, and simmer for 40-45 minutes until tender.
  6. Remove from heat, fold in sliced green onions, and season with salt and pepper. Fluff with a fork before serving.
