  • 1 medium head of cauliflower (about 4 cups florets)
  • 2 tablespoons gochujang (adjust for spice preference)
  • 1 cup sharp cheddar cheese, grated
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 cup panko breadcrumbs
  • 2 green onions, chopped (for garnish)
  • 2 tablespoons butter (for sauce)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Remove leaves from the cauliflower and cut into small florets. Rinse under cold water.
  3. Blanch cauliflower florets in boiling salted water for 3-4 minutes until slightly tender but still crisp. Drain and set aside.
  4. In a saucepan, melt butter over medium heat. Whisk in flour until smooth, then gradually add heavy cream while stirring constantly until thickened.
  5. Stir in grated cheddar cheese and gochujang until melted and well combined.
  6. In a greased baking dish, layer half of the cheese sauce at the bottom, followed by blanched cauliflower florets and the remaining sauce on top.
  7. Sprinkle panko breadcrumbs evenly over the top and bake for 25-30 minutes or until bubbly and golden brown.
