Ingredients

  • 4 medium beets (approx. 500g)
  • 4 cups baby spinach or arugula
  • 2 tbsp gochujang
  • 1 tbsp sesame oil
  • 2 tbsp lime juice
  • 1 tbsp honey or maple syrup
  • 1 tbsp toasted sesame seeds

Instructions

  1. Preheat the oven to 400°F (200°C). Wrap each beet in foil and roast for about 45 minutes until fork-tender.
  2. While the beets roast, rinse and dry the greens, tearing larger leaves into bite-sized pieces.
  3. In a small bowl, whisk together gochujang, sesame oil, lime juice, and honey/maple syrup until smooth.
  4. Once cool enough to handle, unwrap the beets and slice them into wedges or cubes.
  5. In a large bowl, combine roasted beets and greens. Drizzle with dressing and toss gently until well coated.
  6. Sprinkle toasted sesame seeds on top before serving.
