  • 1/2 cup corn syrup
  • 1/2 cup water
  • 3 tablespoons unflavored gelatin powder
  • 1 tablespoon vanilla extract
  • 1 cup powdered sugar (for dusting)

Instructions

  1. In a small bowl, combine gelatin powder with 1/2 cup cold water. Let it sit for 10 minutes until bloomed.
  2. In a saucepan, mix granulated sugar, corn syrup, and 1/2 cup water over medium heat. Stir until sugar dissolves completely (about 5 minutes).
  3. Once the syrup reaches 240°F (115°C), remove from heat and stir in bloomed gelatin until fully dissolved.
  4. Transfer the mixture to a stand mixer and beat on high for about 10 minutes until thick and fluffy; add vanilla extract during mixing.
  5. Pour the marshmallow mixture into a greased pan. Allow it to set at room temperature for 4 hours or until firm. Cut into squares and dust with powdered sugar.
