  • 4 medium starchy potatoes (such as Russets), peeled and grated
  • 1 large sweet onion, finely chopped
  • 6 slices thick-cut bacon, diced
  • 2 large eggs, beaten
  • 1 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 3 tbsp unsalted butter (for greasing)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish with butter.
  2. In a skillet over medium heat, cook the diced bacon until crispy. Add the chopped onions and sauté until translucent.
  3. In a bowl, combine grated potatoes, sautéed bacon and onions, beaten eggs, flour, salt, and pepper. Mix well.
  4. Pour the mixture into the prepared baking dish evenly.
  5. Bake for 45-50 minutes until golden brown and crisp on top. Allow to cool slightly before slicing and serving warm.
