- 1½ pounds live lobster (about 2 lobsters)
- 4 tablespoons unsalted butter
- 2 shallots, finely chopped
- 3 garlic cloves, minced
- ½ cup dry white wine
- 1 cup heavy cream
- 1 tablespoon Dijon mustard
- 1 cup Gruyère cheese, grated (or Parmesan)
- ½ cup fresh breadcrumbs mixed with 2 tablespoons melted butter
- 2 tablespoons chopped parsley for garnish
Instructions
- Boil a large pot of water. Add lobsters headfirst and cook for 8-10 minutes until bright red. Remove and let cool before extracting the meat.
- In a skillet, melt butter over medium heat. Sauté shallots and garlic until translucent and fragrant.
- Pour in white wine, scraping any bits from the skillet, and simmer until reduced by half. Add heavy cream and Dijon mustard; stir continuously until thickened.
- Chop lobster meat into bite-sized pieces and fold into the creamy sauce along with the grated cheese.
- Preheat oven to 375°F (190°C). Spoon mixture back into lobster shells or ramekins, topping generously with breadcrumb mix.
