  • pounds live lobster (about 2 lobsters)
  • 4 tablespoons unsalted butter
  • 2 shallots, finely chopped
  • 3 garlic cloves, minced
  • ½ cup dry white wine
  • 1 cup heavy cream
  • 1 tablespoon Dijon mustard
  • 1 cup Gruyère cheese, grated (or Parmesan)
  • ½ cup fresh breadcrumbs mixed with 2 tablespoons melted butter
  • 2 tablespoons chopped parsley for garnish

Instructions

  1. Boil a large pot of water. Add lobsters headfirst and cook for 8-10 minutes until bright red. Remove and let cool before extracting the meat.
  2. In a skillet, melt butter over medium heat. Sauté shallots and garlic until translucent and fragrant.
  3. Pour in white wine, scraping any bits from the skillet, and simmer until reduced by half. Add heavy cream and Dijon mustard; stir continuously until thickened.
  4. Chop lobster meat into bite-sized pieces and fold into the creamy sauce along with the grated cheese.
  5. Preheat oven to 375°F (190°C). Spoon mixture back into lobster shells or ramekins, topping generously with breadcrumb mix.
  6. Bake for 15-20 minutes until golden brown and bubbly.
