Ingredients

  • 1 lb filet mignon
  • 2 tbsp olive oil
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp fresh rosemary, chopped
  • 1/4 cup shallots, finely chopped
  • 2 tbsp balsamic glaze
  • Microgreens or chives for garnish

Instructions

  1. Preheat a heavy skillet over medium-high heat until hot.
  2. Season both sides of the filet mignon generously with salt and pepper.
  3. Add olive oil to the pan and sear the steaks for 4-5 minutes on each side for medium-rare.
  4. In the last minute of cooking, add shallots and herbs around the steak.
  5. Drizzle balsamic glaze over the filet mignon before removing from heat.
  6. Transfer to a serving platter, garnish with microgreens or chives, and serve immediately.
