Description

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 8 corn or flour tortillas
  • 2 cups enchilada sauce
  • 2 cups shredded cheddar and Monterey Jack cheese blend
  • 1 cup sour cream (for topping)
  • ¼ cup chopped cilantro (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a baking dish with nonstick spray.
  2. Heat olive oil in a skillet over medium heat; sauté minced garlic until fragrant. Season chicken with salt and pepper and add to the skillet. Cook for about 6-7 minutes per side until fully cooked.
  3. Remove chicken from heat, allow to cool slightly, then shred into bite-sized pieces using two forks.
  4. Spread a thin layer of enchilada sauce in the bottom of the prepared dish. Layer tortillas, shredded chicken, and cheese; repeat until ingredients are used up, finishing with cheese on top.
  5. Cover with foil and bake for 25 minutes; remove foil and bake an additional 10 minutes until bubbly and golden brown.
  6. Let rest for five minutes before serving topped with sour cream and cilantro.
