  • 1 red bell pepper, diced

  • 28 oz crushed tomatoes
  • 1 tsp ground cumin
  • 1 tsp paprika (or smoked paprika)
  • 4 large eggs
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté diced onion and bell pepper until softened, about 5 minutes.
  2. Add minced garlic, cumin, and paprika; stir for 1 minute until fragrant.
  3. Pour in crushed tomatoes and season with salt and pepper. Simmer for about 10 minutes.
  4. Create wells in the sauce and crack an egg into each well. Cover the skillet and cook until egg whites are set but yolks remain runny (about 6 to 8 minutes).
