Ingredients

  • 1 cup sushi rice
  • 1 cup tempura batter mix
  • 1 cup assorted vegetables (sweet potatoes, zucchini, bell peppers)
  • 1 ripe avocado
  • 2 tbsp low-sodium soy sauce
  • 1 tsp sesame oil
  • 2 green onions (chopped)
  • 2 tbsp pickled ginger

Instructions

  1. Rinse sushi rice under cold water until clear. Cook with 1¼ cups water in a rice cooker or stovetop until fluffy.
  2. In a bowl, mix tempura batter mix with ice-cold water until just combined; lumps are okay.
  3. Heat vegetable oil in a deep pan. Dip sliced vegetables in the batter and fry until golden brown (3-4 minutes).
  4. Assemble by placing sushi rice as the base, artfully arranging fried vegetables on top, followed by sliced avocado.
  5. Drizzle soy sauce and sesame oil over the bowl. Garnish with green onions and serve with pickled ginger.
