  • 1/2 cup granulated sugar
  • 4 large egg yolks
  • 1 tsp pure vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a medium saucepan over medium heat, warm the milk, sugar, and salt until just warm (do not boil).
  3. In a bowl, whisk egg yolks until pale yellow. Gradually add half of the warm milk mixture while whisking constantly to temper the yolks.
  4. Pour the tempered egg mixture back into the saucepan with the remaining milk; stir in vanilla.
  5. Transfer the mixture into ramekins placed in a baking dish filled with hot water. Bake for 30-40 minutes until set but slightly jiggly in the center.
  6. Cool at room temperature before chilling in the fridge for at least two hours.
