  • 1 cup canned black beans, rinsed and drained
  • 1 cup bell peppers, diced
  • 1 medium onion, sliced
  • 1 cup shredded cheese (sharp cheddar and Monterey Jack blend)
  • 1 avocado, sliced or mashed
  • ¼ cup fresh cilantro, chopped
  • ½ cup sour cream
  • 2 tbsp olive oil (for frying)

Instructions

  1. In a nonstick skillet over medium heat, sauté sliced onions and diced bell peppers for about 5 minutes until tender.
