Instructions
- Boil water and cook ramen noodles according to package instructions for about 3-4 minutes. Drain and set aside.
- In a large pot, heat the vegetable broth over medium heat until simmering.
- In a small bowl, whisk together tahini and miso paste until smooth.
- Gradually stir the tahini-miso mixture into the simmering broth.
- Add fresh vegetables to the pot and cook for an additional 3-5 minutes until tender but vibrant.
- Divide noodles into bowls and ladle over the broth and vegetables. Garnish with sliced green onions, toasted sesame seeds, and soft-boiled eggs if desired.
