- 1 cup whole milk
- 1/4 cup raw honey
- 2 tablespoons dried culinary lavender
- 2/3 cup granulated sugar
- Pinch of salt
- 4 egg yolks
Instructions
- Heat 1 cup of heavy cream in a saucepan over medium heat until tiny bubbles form. Add 2 tablespoons of dried culinary lavender and steep for 15 minutes.
- In a bowl, whisk together 4 egg yolks and 2/3 cup granulated sugar until pale and fluffy.
- Gradually pour the lavender-infused cream into the egg-sugar mixture while whisking constantly to avoid scrambling the yolks.
- Return the mixture to low heat, stirring constantly until thickened (about 5-7 minutes).
- Remove from heat; stir in 1 cup whole milk, 1/4 cup honey, and a pinch of salt. Cool completely before refrigerating for at least two hours.
- Pour the chilled mixture into an ice cream maker and churn according to manufacturer instructions until soft-serve consistency (about 20-25 minutes).
